Burrata, Nectarine & Tri-Colour Tomato Salad

Ingredients

  • 1 burrata
  • 2 ripe nectarines, sliced
  • 300g tri-colour tomatoes, cut into wedges and halves
  • 2 handfuls mixed baby lettuce
  • 1 tbsp extra virgin olive oil
  • 1 tsp Steenbergs Tomato Flakes
  • ½ tsp Steenbergs Lemon Pepper
  • 1 tsp Steenbergs Parsley
  • Flaky sea salt
  • Balsamic glaze
  • Nasturtium flowers, to finish

Method

  1. Arrange the lettuce on a serving platter.
  2. Toss the tomatoes and nectarines with the olive oil, Steenbergs Tomato Flakes, Lemon Pepper, Parsley and a pinch of sea salt.
  3. Lay the lettuce on the plates along with the tomatoes, leaving space in the centre.
  4. Nestle the burrata in the middle.
  5. Drizzle with balsamic glaze and finish with the nasturtium flowers. Add an extra pinch of Tomato Flakes and Lemon Pepper, if desired.

Serve immediately with crusty bread for scooping up every last bite.
