
A fresh, vibrant Middle Eastern-inspired salad packed with crunchy lettuce, cucumber, juicy tomatoes and peppery radishes. Instead of traditional flatbread, crisped gluten-free tortilla pieces bring the crunch, while a bright dressing featuring Steenbergs za’atar, spearmint, Aleppo chilli flakes, garlic powder and Urfa chilli flakes adds layers of citrusy, herby warmth.

Ingredients
For the crisped tortilla pieces
- 2 gluten-free tortillas
- 1 tbsp olive oil
- ½ tsp sea salt
For the salad
- 1 large romaine lettuce, chopped
- 4–5 radishes, thinly sliced
- 1 cucumber, diced
- 250 g cherry tomatoes, halved
- 1 small red onion, finely sliced
- Large handful flat-leaf parsley, roughly chopped
- Small handful fresh mint leaves, roughly torn
For the dressing
- 4 tbsp extra virgin olive oil
- Juice of 1 lemon
- 1½ tsp Steenbergs za’atar
- 1 tsp dried spearmint
- ½ tsp Steenbergs Aleppo chilli flakes
- ¼ tsp Steenbergs Urfa chilli flakes
- ½ tsp garlic powder
- ½ tsp sea salt
- Freshly ground black pepper, to taste
Method
- Preheat the oven to 200°C (180°C fan) or preheat an air fryer to 190°C.
- Tear or cut the gluten-free tortillas into bite-sized pieces. Toss with the olive oil and sea salt.
- Bake for 6–8 minutes, or air fry for 4–6 minutes, until golden and crisp. Set aside to cool.
- In a large salad bowl, combine the lettuce, radishes, cucumber, tomatoes, red onion, parsley and mint.
- In a small bowl or jar, whisk together the olive oil, lemon juice, Steenbergs za’atar, dried spearmint, Aleppo chilli flakes, Urfa chilli flakes, garlic powder, sea salt and black pepper.
- Pour the dressing over the salad and toss gently until everything is lightly coated.
- Just before serving, scatter over the crisped gluten-free tortilla pieces and toss once more very lightly so they retain their crunch.
Serving Notes
For the best texture, add the tortilla pieces at the last moment. The combination of crisp tortilla, fresh herbs, peppery radishes and the aromatic za’atar dressing creates a light, colourful salad that works beautifully alongside grilled vegetables, falafel or as a refreshing lunch on its own.
