Yes…I took the plunge and tried my hand at vegan soft cheese and you know what? It tastes bloody marvellous! It was a simple method, not overwhelming in the slightest and the cheese does go a long way as it has such a lovely strong flavour. Please give it a go, you can find agar agar on amazon along with the tapioca starch:
Ingredients
180g of raw cashews soaked for at least 4 hours
2 Tbsp Tapioca Starch
Up to 150ml of water
1 Tbsp Lemon Juice
1 Tbsp Apple Cider Vinegar
2 Tbsp Coconut Oil
1.1/2 Tbsp Nutritional Yeast
1/2 Tsp of Sea Salt @steenbergsltd
1/2 Tsp of garlic powder @steenbergsltd
1 tablespoon of Herbs De Provence @steenbergsltd
Agar Agar Mixture:
3 Tbsp of Agar Agar Powder
1 cup of water
Method:
For the Agar Agar Mixture
- In small saucepan on medium heat, add the water and the agar agar powder Stir the mixture for 3 to 5 minute until you get a very gooey and sticky consistency. Set it aside.
For the Soft Cheese
- In your blender, add the soaked cashews, tapioca starch, nutritional yeast, garlic powder, lemon juice, apple cider vinegar, coconut oil, salt and pepper and water. Blend everything until smooth.
- Grease a ramekin (I like the coconut oil spray), then pour in your mixture. Set it in the fridge for about 3 to 5 hours, and your vegan soft cheese is ready to serve after its been adorned with Herbs De Provence, I like to add it to the sides but you can cover it completely if you wish.
You can store it in the fridge for 5 to 7 days. Enjoy it with some toast, pasta, pizza or just by itself!
