
Ingredients:
125g of olive oil
125g of coconut sugar/light brown sugar
3 eggs
200g of plain flour/gf plain flour
1 tsp of ground cinnamon
1 tsp of apple pie spice mix
2 tsp of baking powder
1 apple grated plus 3 apples, halved and finely sliced
2 tbsp of demerara sugar
Ice cream or custard, to serve
Method:
Preheat the oven to 180C and grease a cake tin and line with greaseproof paper, set aside.
Mix the olive oil and sugar in a bowl and then add the eggs, one at a time.
Stir in the flour and apple pie spice mix along with the baking powder. Mix until just combined.
Add in your grated apple and scrape the batter into the prepared tin and smooth the top using a spatula to create an even layer. Nestle the apple halves into the batter, press them in so they are half submerged.
Sprinkle the cake with demerara sugar, bake in the oven for 50-55 minutes or until golden brown. Allow to cool completelty in the tin, then slice up and serve with ice cream or custard. Enjoy!
