Swedish Style Meatballs

Ingredients:

Meatballs:
500g of beef mince
1 onion – grated
4 tbsp of gf breadcrumbs
1 medium egg
5 tbsp (75ml) full-fat milk/dairy free milk
½ tsp salt
¼ tsp black pepper
¼ tsp white pepper
¼ tsp of mixed spice
2 tbsp vegetable or olive oil

Sauce:
3 tbsp of unsalted butter
3 tbsp plain – all-purpose flour/gf flour
180 ml (3/4 cup) beef stock
120 ml (1/2 cup) vegetable stock
120 ml (1/2 cup) of coconut cream
2 tsp dark soy sauce/coconut aminos
1 tsp Worcestershire sauce/gf version
1 tsp Dijon mustard
¼ tsp salt

To Serve:
Finely chopped fresh parsley
Creamy mashed potato
Lingonberry jam – or redcurrant jelly
Green veg – such as broccoli or green beans

Method:

  1. Mix all of the meatball ingredients and set aside for a minimum of 30 minutes. When you are ready to fry, heat your saucepan on a medium heat and add your olive oil. Shape your meatballs into smallish balls and fry in batches. Place on a warm plate when all the meatballs have been fried off and get on with the sauce.
  2. In the same saucepan, add your butter and flour. Mix well to form a roux and then add your stock. Finally, add in your coconut milk and your sauces and simmer for 5 minutes. Bring the heat down and add your meatballs back into the pan. Simmer for 10 minuted before serving with freshly choppped parsley. Enjoy!
