Mmmm…easy, fast and cold lunches for the win I say! My Chorizo and Lamb Lettuce wraps are perfect for your next summer meal, with a drizzle of honey lifting the chorizo to a whole new level of flavour and cold crispy romaine lettuce, it’s perfect!
All you need is:
300g of lamb mince
150g of chorizo, chopped up
3-4 heads of mini Romaine lettuce, separated into single leaves
1 large handful of radishes, sliced finely
2 bell peppers, sliced finely
2 tablespoons of honey
1 teaspoon of ground coriander @steenbergdsltd
1 teaspoon of sea salt @steenbergsltd
2 tablespoons of olive oil
1 heaped teaspoon of sweet smoked paprika powder @steenbergdsltd
Lemon slices, to serve
1. Start off by laying out your mini romaine lettuce leaves and layer up with bell pepper strips and radish. Set aside.
2. In a skillet or large pan, heat your oil and simply add in your chopped chorizo, together with the lamb and all the spices. Cook for 10-15 minutes or until it’s browned and piping hot. Allow to cool before spooning the mixture on top of the lettuce leaves and generously drizzling over your honey, bliss!
