Easter is coming and so is alllll the chocolate so starting you off light here. 😉 My Madeleines are a very simple and delicious sweet treat, nothing more, nothing less!
🌸 Ingredients:
For the Madeleines:
2 medium eggs
100g of caster/golden caster sugar
100g of plain flour, plus extra for dusting
1 lemon, juice and zest
¾ tsp of baking powder
100g of unsalted butter, melted and cooled slightly, plus extra for greasing
For decoration:
100g of white chocolate, melted
A small scattering of dried rose petals
🤗 Method:
1. Preheat the oven to 200C/400F/Gas 6. Brush your madeleine tray with melted butter and then shake in a little flour to coat, tapping out the excess, do not skip this step!
2. Next up, whisk together (by hand or with electric beaters) the eggs and the sugar in a bowl until frothy. Lightly whisk in the remaining ingredients, do not overmix at this stage. Leave to stand for 20 minutes before carefully pouring into the prepared madeleine tray.
3. Bake for 8-10 minutes, or until the mixture has risen a little in the middle and is fully cooked through. Transfer the madeleines to a wire rack and leave for a few minutes to cool slightly.
4. Once cooled enough, using the edge of butter knife, tease out the madeleines and dip each one into white chocolate and then transfer to a wire rack. Repeat the process until each one is half coated with the white chocolate and then scatter on your dried rose petals. Leave to set for about 30 minutes before enjoying.
