I want to celebrate this day in style and share my birthday cake with you. Yes, I made my own cake but to me, I couldn’t imagine it any other way!
I wanted to capture what the past 10 years of my life was like in my cake…the light and the dark to show the ups and downs…sharp shards to show the lessons and hardships but also the dark, rich chocolate to show the sweet and unforgettable memories…this is the main element of my cake…the love that pours out and drips down my cake…the most important lesson of this decade was love. To love myself, accept myself and learn to be loved in return.
So here’s my gift to you, my quick and easy dark chocolate truffles with sea salt and crushed almonds:
Ingredients ??
250g of good quality dark chocolate, broken up into small pieces
4 tablespoons of coconut cream
2.5 tablespoons of almond butter
1 teaspoon of crushed pink Himalayan salt @steenbergsltd
2 tablespoons raw cacao powder @rawelements
A small handful of almonds , chopped very finely
? 1. Simply heat your coconut cream in a small pan, just before it reaches boiling point, pour over your dark chocolate in a large glass bowl. Mix until combined and set it aside to cool slightly.
2. Next, swirl in the almond butter and half the Himalayan salt and crushed almonds and mix again. Pour the mixture into some silicone square moulds and let it set in the fridge.
3. Finally, pop out and roll in your cacao powder and the remaining Himalayan salt and crushed almonds…and devour!
