Niki’s Dark Chocolate Cookies

🍪 Mmmm…dark chocolate cookies…can you beat them?! Chewy on the inside…crunchy on the outside, what more could you want from a cookie? I am totally in love with these cookies, gluten free (with vegan option) and only 5 ingredients, perfect for gifting this festive season! 🎄

All you need is:

Makes 10-12 cookies

Note: add 2 tablespoons of gf flour or coconut flour if your mixture is too runny 😊

· 120g of smooth almond butter
· 120g of coconut sugar
· 1 large free range egg (or chia egg mixture)
· 100g of chunky dark chocolate chips

· 1 teaspoon of baking powder @steenbergsltd – 1/2 teaspoon of sea salt @steenbergsltd

 

Method:

Step 1:
Preheat the oven to 180°C/gas mark 3 and line two baking trays with greaseproof paper.
Step 2:
In a large bowl, combine all the ingredients using a silicone spatula until the mixture comes together. Using your hands, mould the cookies into little balls and flatten them out onto your baking sheet.
Step 3:
Bake for 10-12 minutes or until golden brown and set on a wire rack to cool down, enjoy!
