Niki’s Ratatouille

Oh yes that’s right, the day of love is just round the corner…you need this quick and yummy Ratatouille to wow that special someone in your life or your family and friends. I feel that Valentine’s day shouldn’t be spent on lavish gifts, but rather, on delicious home-cooked food!

To serve 4 here’s what you need:

2 courgettes, 2 aubergines and 2 tomatoes all sliced finely (watch your fingers if you use a mandolin!!)
1 teaspoon of fines herbs
1/2 teaspoon of sea salt
2 tablespoons of olive oil
400ml of tinned chopped tomatoes
The juice of half a lemon

Method:

Step 1:

Preheat your oven to 200 degrees or mark 6. In your ovenproof dish, add in your tin of chopped tomatoes and lemon juice. Add in your sliced vegetables, alternating the courgettes, aubergine and tomatoes.

Step 2:

Sprinkle your fines herbs, olive oil and sea salt and bake in your oven for 20-25 minutes until your ratatouille is bubbling. Serve right away!!
