Lemon & Lime Drizzle Loaf

Ingredients: 

200g gluten-free plain flour
1 tsp baking powder
½ tsp bicarbonate of soda
¼ tsp fine sea salt
150g caster sugar
2 large eggs
120ml neutral oil (or melted butter)
150ml yoghurt (or dairy-free alternative)
Zest of 1 lemon
Zest of 1 lime
1 tsp vanilla extract

For the icing:
Juice of 1/4 lemon
Juice of 1/4 lime
80g of icing sugar

Lemon & Lime Zest

A drop of green food colouring

A few spoonfuls of Lime Marmalade – Thursday Cottage 

Method: 

1. Preheat your oven to 180°C (160°C fan) and line a 2lb loaf tin with baking paper. In a bowl, whisk together the gluten-free flour, baking powder, bicarbonate of soda and salt.

2. In a separate large bowl, whisk the sugar and eggs until pale and slightly thickened. Add the oil, yoghurt, lemon zest, lime zest and vanilla extract, whisking until smooth.

3. Fold the dry ingredients into the wet ingredients until just combined. Pour the batter into the prepared loaf tin and smooth the top.

4. Bake for 45–55 minutes, or until golden and a skewer inserted into the centre comes out clean.

5. While the loaf is still a bit warm, mix together the lemon juice, lime juice, green food colouring and icing sugar to make a thick glace icing, then spoon all over the cake and sprinkle with the lemon and lime zest. Leave to cool completely before slicing and spooning over Thursday Cottage Lime Marmalade!
