
Ingredients:
- 3 tbsp Sophie’s loose-leaf Earl Grey
- 180 ml boiling water
- 115 g butter, softened
- 150 g brown sugar
- 2 eggs
- 1 tsp vanilla
- Zest of 1 orange
- 170 g gluten-free plain flour
- 1½ tsp gluten-free baking powder
- ½ tsp salt
- 80 ml milk
- 120 g dark chocolate chips
Topping
- 4 tbsp thick-cut marmalade
- 1 tbsp hot water
- Fresh mint, finely sliced
Method
- Brew Tea
Steep tea in boiling water 5 min. Strain and allow for a strong brew. - Prep
Heat oven to 170°C / 340°F. Line loaf tin. - Mix Wet
Cream butter + sugar. Beat in eggs, vanilla, zest. Stir in brewed tea. - Mix Dry
Combine flour, baking powder, salt. - Combine
Fold dry into wet. Add milk. Fold in chocolate chips. - Bake
Pour into tin. Bake 50–55 min. Cool. - Finish
Add your marmalade and a dash of water to loosen water. Spoon generously onto your loaf. Garnish with fresh mint and enjoy!
