
Ingredients:
– 1 3/4 cups GF all-purpose flour blend (with xanthan)
– 1/2 cup almond flour
– 1 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt
– 3/4 cup granulated sugar
– 3 large eggs
– 1/2 cup Greek yogurt (or dairy-free)
– 1/2 cup milk (or plant milk)
– 1/2 cup melted butter (or neutral oil)
– 2 tbsp blood orange zest + 1/3 cup fresh blood orange juice
– 1 tsp vanilla, 1 tsp apple cider vinegar
– Thursday Cottage Blood Orange Curd (for serving)
– Edible blue cornflowers for garnish š
Method:
1. Preheat oven to 175°C. Grease + line an 8″ pan.
2. Whisk dry ingredients. In another bowl beat eggs + sugar, then add yogurt, milk, butter, zest, juice, vanilla, vinegar. Mix.
3. Fold dry into wet until just combined ā batter should be slightly thick.
4. Bake 30ā35 min until a toothpick comes out with a few crumbs. Cool completely.
5. Slice, spoon Thursday Cottage Blood Orange Curd over each slice, top with blue cornflowers.
