Tri-Colour Tomato Bruschetta

Ingredients: 

2 ciabatta loaves, sliced lengthways 

1 ball of burrata cheese, drained and patted dry 

2 tablespoons of olive oil 

A handful of tricolour tomatoes 

2 garlic cloves, peeled and halved

A handful of fresh basil, torn

1 tsp of Urfa chilli flakes 

1 tsp of traditional sea salt

1 tsp of Aleppo chilli flakes 

Method: 

  1. Preheat the oven to 160ºC and line a sheet of greaseproof paper onto a large baking tray. 
  2. Drizzle olive oil onto the ciabatta slices and bake in the oven for 5 minutes.
  3. In a separate pan add your olive oil and throw in the tricolour tomatoes. Cook over a medium heat and add your spices and garlic cloves. Cook until just blistered. 
  4. When the slices have been toasted, spread over the burrata cheese and add the tomatoes. Garnish with fresh basil and extra sea salt and enjoy!
